Chef & Brewer country pub at the crossroads in Burley, in a building that began as a blacksmith's forge in 1685. It keeps separate no-gluten-containing menus, in print at the pub and as PDFs on its website.

The pub holds its own no-gluten-containing menus rather than leaving you to work it out from the corporate allergen lookup: printed copies are at the pub and PDFs are on the website. The general manager says the kitchen substitutes as far as it can rather than simply leaving things off — chips are fryer-cooked, so the alternative is a jacket potato, mash or salad. The pub holds no-gluten-containing Yorkshire puddings and gravy, so a whole roast dinner can be served with no gluten-containing ingredients.

Chef & Brewer's no-gluten-containing approach means dishes made without gluten-containing ingredients, not certified gluten free, and Greene King's own line is that everything is prepared in kitchens where gluten is present and nothing can be guaranteed free of traces. Chips come out of a fryer the pub steers gluten free orders away from, so the chip alternatives are the thing to ask about. Tell the team you are coeliac and ask for the no-gluten-containing menu by name.
